The cuisine of Goa gets its distinctive character from a melange of cultural influences over millennia, including traditional Konkan vegetarian cookery, Persian influences during the rule of the Sultans and, more recently, Portuguese. All of these cultures have mingled to give Goa its unique cuisine – unlike anywhere else in India.
What's in the box?
(CELERY & MUSTARD)
Chargrilled chicken thighs, marinated in typical, Goan style peri-peri masala puréed in palm vinegar, sprinkled with Mr Todiwala’s “Shake it all about” dusting powder. This dish was brought to Goa, from Angola, by the Portuguese.
BOLOS DE BACALHAU
(EGG, DAIRY, FISH, GLUTEN & MUSTARD)
Better known as Salted Cod-cakes, these are perhaps the most popular of Portuguese snacks that found their way to Goa. Served with Mr Todiwala’s Tomato & Garlic Mayo.
PÃO COM PASSAS E MANTEIGA
Buns with raisins & butter. This sourdough bread, another Portuguese import, was made by using Toddy for the fermentation process, at a time when yeast from hops was not available. Today, very few bakeries in Goa make this bread; but in Bombay, these semi-sweet buns remain a staple in many Iranian cafés.
GOAN PRAWN CURRY & RED RICE
(COCONUT MILK & CRUSTACEAN)
Sustainably sourced king prawns simmered in traditional Goan coconut curry, flavoured with curry leaves and butternut berries. Another Goan Classic, with a deliciously spiced, slow punch.
RED RICE: A traditional Goan recipe.
ACCOMPANIMENTS: ONION SALAD, PAPADS & Curry Leaf and Red Chilli GARNISH.

A coconut pancake, flavoured with nutmeg, baked in layers, slowly, over 6-8 hours. This is a Portuguese classic infused with Goan flavours.
Mr Todiwala's ‘COOK at HOME’ Boxes are prepared fresh, on order, in the kitchen of Café Spice Namasté. Therefore, there is a limit to the number of meal boxes that can be prepared & dispatched each week. So please get your order in early.
