LAMB DHAANSAAK with CARAMALISED ONION RICE
Dhaansaak is one of the dishes that truly represents Parsi cuisine. Dhaansaak is a combination of two words: ‘Dhaan’, the rice flavoured with caramelised onion and star-anise; and ’Saak’, the lamb cooked along with medium-spiced, pureed lentils and vegetables.
This dish is deeply rooted in its ancient Persian heritage. Its creation goes back a thousand years when Parsis, Zoroastrians from Persia, first emigrated to India in the 6th century. Our Dhaansaak is based on Cyrus Todiwala’s great grandmother’s original hand-written recipe!
ACCOMPANIMENTS: LAMB KEBABS, SALAD, GARNISH & PAPADS
To make the dish complete, we serve it with spiced lamb mince kebab balls, a red onion salad, caramelised onions for garnish and fried papads.
