A traditional hot vegetable pickle made with Carrots, Peas & Broad Beans.
A special masala is ground in which the base is made. Thereafter the vegetables are simmered only till they are still crunchy to the bite. This is then left undisturbed before being prepared and sealed in jars.
Traditionally making this pickle in India, my mother would leave it on the terrace for up to three months or till she was satisfied that the pickle was ready for storage for the following year.
Ingredients: Carrots, Peas, Broad Beans, Corn, Rapeseed Oil, Tomato Purée, Cane Syrup, Ginger, Garlic, Green Chilli, Black Pepper, Cardamom, Fennel Seeds, Mustard Seeds, Red chilli Powder, Cumin Seeds, Silver Skin Onion, Citric Acid.
