      DESCRIPTION

      The Chettiars of Tamil Nadu or the region of Madras were the pioneers of the pepper trade and hence prospered thereby adding a variety of meats into their cuisine too.
      However, the heat in their food was evident with the use of crushed pepper corns. This masala takes some of the varied qualities of the region and is made for you to use in curries, sauces and as a rub if you so choose.

      Seasoning is left to your discretion of course but use like any of our masalas and tailor to your own tastes.

      Comes with a sample Recipe from Cyrus Todiwala OBE DL.

      Each tin creates approximately 2-3 sample recipe portions.

      Ingredients:  Coriander, Cumin, Fennel, Red Chilli, Green Cardamom & Bay Leaves.
